Ben and I have been taking turns being sick. So tonight is my turn. Being sick means a whole lot less patience in the kitchen. So here it is – 10 minute soup. No joke.
– olive oil
– 3 cloves garlic
– 1 carrot
– 4 baby bok choy
– 1/2 chicken boillon cube
– approx 2 cups water
– leftover meat, all seasonings included
I used 1/2 a chicken boillon cube to stay on the healthy side, but you can go all out if you are going full vegetarian. I added a couple pieces of chicken leftover from a previous meal that had been simply flavoured with tomato, tomato paste, olive oil, onions and garlic. See here –
This together with the chicken cube was enough for flavouring. I also used a generous amount of (approx. 1 tbsp) olive oil, which combined with frying the garlic first intensified the flavour quickly.
Some of you may not like wilted greens, so throw this in last after adding water. I don’t mind greens in broth, having grown up with cooked greens. The key is not to overcook it.
