A meal from last week that served 4!

Pulled pork:
– 1 lb pork shoulder (boneless)
– 6 peppercorns
– 1 clove garlic, diced
– approx. 1/8 cup ketchup
– approx. 1 tbsp vinegar
– approx. 1/2 tbsp Worcestershire sauce
– 1 tsp sugar

Place everything into slow cooker and cook on low for 8-10 hours.

Side of potatoes:
– 4 small-medium potatoes, diced
– spray with oil (coconut is fine)
– salt
– paprika

Bake at 400F for 20-30 minutes

Sandwich toppings:
– 1/2 head of iceberg lettuce, outer leaves removed and composted
– 1/2 cucumber, sliced
– 2 medium sweet onions, sliced, seared and caramelized on low heat in olive oil
– Dijon mustard/ketchup optional
