Chai Spice Granola & Apple Spice Granola

granola3Between eating out the freezer, getting take-out, and creating weird concoctions for meals, I was ready for real food again, real food that doesn’t cost more than it’s worth, real food that takes longer than the time it takes to get to work to digest, and real food that felt like the fiance and I were getting decent nutrition.

Having taken stock of what was available in the pantry, I paid the bulk food store a visit and bought enough extra ingredients to make 7 cups of two types of granola to be shared between two. I took a mason jar of the stuff with 1/2 cup of milk poured over to take to work, and it was so filling I couldn’t finish it. So I’m satisfied that these are slow digesting ingredients!

Super fast to mix up and super fast to bake, at 30 minutes each, 300F for the chai spice and 350F for the apple spice.

Chai Spice

Chai Spice

Chai Spice – at 300F for 30 minutes
– 2 cups old fashioned oats
– 2 cups rye flakes
– 2 cups nuts (I used 1/2 cup walnuts, 1.5 cups whole almonds)
– 2 tsp cinnamon
– 1 tsp ginger
– 1 tsp allspice
– 1/2 cup fancy molasses
– 1 tsp vanilla
– 1/4 cup chai spice syrup

Mix everything together in a large mixing bowl, and bake in a parchment paper covered/greased baking tray.

Apple Cinnamon

Apple Spice: at 350F for 30 minutes
– 1.5 cups large flake oats
– 2 3/4 cups buckwheat groats
– 2 3/4 cup dried apple pieces
– 1/4 cup pepitas (pumpkin seeds)
– 1/3 cup flax seeds
– 1/4 cup whole almonds
– 2 tsp cinnamon
– 1/2 tsp nutmeg
– 1/4 tsp ginger
– 1/2 tsp allspice
– 3/4 cup apple butter (or apple sauce – I used apple butter since that’s what I had)
– 1/4 cup honey
– 1 tsp vanilla

Mix everything together in a large mixing bowl, and bake in a parchment paper covered/greased baking tray.
