Cheesy Basil Quinoa Risotto for Two

Risotto Quinoa

I’ve been doing a lot of pantry cooking lately since I’ll be moving house soon, and this was one of the latest shindigs – quinoa risotto. This was something of an experiment to eat healthy – though the cheese kind of defeated that purpose – and to see if Ben would enjoy it (enjoy the quinoa I mean). He did, so I’m happy that quinoa would be resurfacing again in future meals. 🙂

Ingredients for 2 modest size portions:

– 1-1.5 cups boiling water
– 1.5 tbsp minced garlic
– 1 cup quinoa
– 2/3-1 cup white wine
– 1/2 small package of basil, cut into small pieces with scissors
– 1/2 cup vegetable broth
– 1 cup cheese (we used processed cheddar, but I bet any cheese would be a great addition)
– salt to taste
